I have been on the Paleo diet for 5 months, without any cheating. In order to maintain the 2,400 calories a day I need to stay healthy, I'm eating meat three times a day, lots of fresh veges, and limited fruits. However, I'm still not able to eat enough (physically) to maintain the calorie count unless I supplement my diet with baked goods made from coconut flour or almond flour. My MD is concerned about the amount of nuts I am eating, since I eat a few almonds during the day, and then consume a piece of Paleo carrot cake or Paleo pound cake (made with almond flour). What do you guys think about eating Paleo muffins or a piece of cake each day to help me stay in the calorie target zone?

I second the recommendation to add carbs, specifically in the form of starches. Adding nuts means adding linoleic acid which is problmeatic. Sweet potato, potato, rice. The first two peeled and boiled...or microwaved in the skin then peeled under cold running water. – Katherine Aug 24 2011 at 1:33
A usual day of eating is an almond butter / banana / coconut milk smoothie with 2 egg muffins (with lean sausage) for breakfast. For lunch is 7 to 8 ozs of meat (chicken, tuna, salmon, pork loin, etc.), 12 ozs of green veges, piece of fruit. For dinner, 6 to 8 ozs of lean meat, more veges. Personally I think you would be better off upping the carb content of your diet to reach your cal needs. Nut based paleo baked goods should be a treat food imo as they aren't necessarily that healthy.

So you would recommend a higher carb content? I've been told that I need to keep the carbs less than 25%. I definitely know I could down more carbs, because I have to work not to get too many. What is the rationale for keeping your carbs low? It does not make sense if you are struggling to keep calories and weight up. Paleo does not equal low carb, paleo is about food quality. Carbs as required for each individual. Nuts are high in omega 6 = inflammation. use coconut or coconut cream or oil and more carbs. – julianne Aug 24 2011 at 2:43

Maybe look at adding some more fat? 2,400 is not hard to make if you are eating even a little bit of fat. Just take whatever you like to eat and throw some butter or CO on it.

I agree with Eric that you might want to save the cake for a treat.

One suggestion: eat more meat. 6 to 8 oz is a decent sized appetizer.
