I know I've been asking quite a few questions, but this is really the first time I've sat down and thought about things.

First question: What is considered moderation for potatoes and rice? I used to eat those all of the time (they're actually the two things that I hate cutting out) and when they're all mashed up I can easily eat them. I'd really like to eat chicken stock with some rice (Or soft eggs with some overcooked, mushy rice!), but I don't want to over-do it.

Second Question: Is there any way to make dark chocolate from unsweetened baking chocolate? I have two large blocks of them (I love baking!) and have yet to find a recipe I can use them in (and I'm certainly not eating them by themselves). They cost me quite a bit and are pretty high quality, so I'd hate for them to go to waste.

Regarding your question about potatoes/rice and moderation, it depends on you. If they cause you no weight gains or weird problems feel free to eat as much as you please.

To make dark chocolate melt it down and stir in desired amount of sugar until incorporated. Throw in the freezer for a bit and enjoy

I enjoy some baking chocolate melted into coconut milk (or heavy cream if you do cream), a splash of vanilla and some cardamom. Yummy! It takes some getting used to, but I can eat it straight up now.

Also, you could warm some coconut oil, melt your chocolate into it, add some coconut and slivered almonds toasted in butter, vanilla, spices (cinnamon, cardamon, extracts, etc). When it cools it's like eating chocolate candy. I just mix it in a little bowl and stick it in the freezer for a few minutes, or if I'm doing a bigger batch I'll pour it onto wax paper and break it into pieces after it's hardened in the fridge or freezer. Yum!
