I like to cook up various ground meat patties (turkey, lamb, bison, beef) and freeze them for convenient reheating later. However, I detest the way microwave-reheated meat tastes. I've had good results putting meat on the gas grill and frying it in a pan w/ butter or coconut oil. Today I reheated lamb and bison in the toaster-oven: the lamb was fine, the bison pretty gross. What's up w/ that? I think I recall heating bison in a fry pan and not liking it as well. I should add that I love fresh-cooked bison, but reheating it makes it taste funky.

Any suggestions?

I've had luck reheating dry smoked beef brisket slices in the microwave by putting them on a bed of chopped cabbage and onions, then covering the dish with a wet paper towel. The microwave reheats the meat by steaming it, and the result is tender and moist. The cabbage and onions also cook and pick up flavor from the fat. I get a decent two dish hot meal in less than two minutes.

Half-cook the patties, then freeze them. After thawing, cook them until they're was warm as you want, and they should be good.

Reheated meat usually becomes overcooked because it's already cooked before being reheated. Another factor is what method you use to reheat the meat. – Nick Aug 31 2011 at 23:22

ziploc bag and water bath, 131F is medium rare. Will not overcook.
