Is there any reason why adding lime juice to coconut milk would make its easier on the stomach ?

I tried making a coconut milk and lime juice gelatin "dessert" once and actually it gave me a tummy ache. It was really yummy, though.

Well, most acids can "digest" (not the proper word to use, but it's the closest) proteins. This is why when you marinate meats they become softer. I imagine the lime could digest the proteins in coconut milk (but not coconut water or coconut oil since they don't have protein and if they do, it's a trace amount) and thus make it easier to digest.

Add some pineapple rum, you'll be feeling too good to notice an upset tummy :)

Better yet (I've done this, it's AWESOME I promise) blend up some Sailor Jerry Spiced rum, pineapples, pineapple juice, coconut milk, coconut water and cream. Mmmmmmmmmmmmmm. Make sure you have tiny umbrellas on hand. – Futureboy Sep 3 2011 at 3:24
That sounds absolutely divine! I've had to really cut back on the sugars (aside from fruits) though--I have to stick with drinks like Bloody Marys or vodka tonics :/ I do enjoy a good mojito on occasion! – Nemesis Sep 3 2011 at 3:45
