I recently tried grass-fed ground beef and was speechless. Give that to me instead of a pizza or a bag of chips anytime. I finally understand why the paleo community is such a big fan of fatty cuts.

As I don't have easy access to grass-fed beef, I can't buy new beef often. I only bought 6 hamburgers, the rest are steaks (like 5 pounds of sirloin steak). I don't wanna run out of those amazing hamburgers immediately, so I decided to eat more fish and ... make my own ground beef. I tried to do it yesterday, with a food processor, but the taste wasn't the same at all!

Does anybody have more experience with making ground beef? I'm thinking of putting it in the food processor a bit longer and adding a bit of parsley before cooking the beef.

To make proper ground beef you'd need a beef grinder. It's a specialized piece of equipment that costs around $100 (for cheap models). http://www.amazon.com/Deni-3500-800-Watt-Professional-Grinder/dp/tech-data/B001AQERMK

The next-best thing is to finely chop up a portion of sirloin into tiny, tiny bits and pack it all together creating a patty. That would be very time-consuming though :(

I was actually able to make a hamburger with a simple food processor. It worked great. It wasn't as finely chopped as I wanted it to be, but it was close... – Korion Sep 3 2011 at 15:45
You think a more simple (grandma-style) meat grinder is good enough? – Korion Sep 3 2011 at 15:53

I found an old style well made hand crank meat grinder at a thrift store yesterday. It only set me back $14. – vdh1979 Sep 3 2011 at 16:05
Whoa nice vdh1979! I've always got my eye out for old-fashioned kitchen implements at thrift stores, but THAT is a score! I'd be making massive quantities of sausages and paleo-slim-jims! – Futureboy Sep 3 2011 at 17:52
something like this, but with more organ meat! bbq-brethren.com/forum/showthread.php?t=111516 – Futureboy Sep 3 2011 at 17:57

How to actually grind your meat aside, you want a good mix of lean and fatty cuts in the final product. I've always been partial to alton brown's recipe:

Well, you could get a meat grinder, but it isn't strictly necessary. For instructions on how to do it without a grinder, check this page out: http://www.amazingribs.com/recipes/hamburgers/grinding_your_own_hamburger.html

Or if you're really obsessive, read this: http://aht.seriouseats.com/archives/2011/04/the-burger-lab-whats-the-best-way-to-grind-beef.html

Where do you buy it from? If you buy it from a butcher you can ask them to grind it for you.

I make ground chicken and pork myself, I up to this point, have just cut into cubes and put into my food processor.

I recently bought a grinder adaptor for my KitchenAide Mixer and it works great....a bit more work though but the result is similar to the processor. I add in whatever I want for flavor.

Keep it simple if you don't have the machinery or want to invest....
