Alright, so a good friend of mine (kinda)talked me into doing 20g of carbs per day or less, starting tomorrow. I've been looking up carb contents for foods that I usually eat(yikes, yams!) I'm kinda getting overwhelmed and feel like I need to memorize the carb content of everything, which is making me a little paranoid.

I'm wondering if there are any high carb vegetables and fruits that I should look out for? And any other random helpful hints would be appreciated, I've been scanning some of the VLC threads already on here.

What is your goal in doing this? WHY are you going LC? IF it is for weight loss, it would be helpful to have more info: weight, height, age, general weight history (as in, has significant wt gain been a problem since childhood, or?) how much you want to lose, any medical issues, any medications/supplements, physical activity level in general, high stree? sleep a problem? etc :) Oh, and gender! – Atkins-witha-loincloth Sep 5 2011 at 23:08

For me VLC has been the only Paleo I've done so I can give you some pretty good advice. If you want to do 20g of carbs or less here's some tips.

  1. To keep net carbs down choose dense green vegetables such as spinach, greens(mustard,collard), kale, asparagus, and romaine lettuce with the veins cut. The first three are nutrient dense and the carbs are primarily fiber for all of these choices.
  2. Yo can eat other vegetables of your likely, but think of them as accents to a dish and not a full portion. Veggies like carrots, onions, shallots, garlic, and grape tomatoes fall under this category.
  3. Other than berries, fruits will significantly add to the carb count because of the higher sugar content. You can eat them, but it's like a once a day thing.
  4. Shredded coconut is pretty awesome for VLC. The way I eat it is I put it in a container and put a few ounces of water to rehydrate it and add coconut milk (also VLC) to it until its a smooth texture. High in fiber too.
  5. Make sure you get plenty of fat. EV coconut oil and macadamia nut oil are what I use, but olive oil, lard, tallow, and butter are great too. The extra fat is the best way to make up for the carbs. <<<(This is most important)
  6. I don't like nuts, but you do there a low carb snack high in fat.

If ketogenesis is your goal, then according to PHD (here) and (here), supplementing with MCT oil and leucine will give you a certain amount of latitude with your carb intake and still be ketogenic.

You may want to check out the "what you can eat" links for phase 1 & 2 of the Atkins diet and ignore non-paleo foods.
