Is it Paleo? Or, do you know a buffalo sauce that is paleo. I think Buffalo sauce is addictive, sometimes I crave buffalo chicken for weeks at a time.

Yes buffalo sauce is Paleo if you consider dairy to be in your diet. Combine 1 part unsalted butter with one part franks red hot. (Aged Cayenne Red Peppers, Distilled Vinegar, Water, Salt, Natural Flavor and Garlic Powder)

I usually go 2:3 in my recipe (2 parts butter to 3 parts sauce). You can also add dry spices for extra heat. It's still paleo and soooo tasty. – air_hadoken Sep 9 2011 at 19:29
I should clarify that my ratio above is for deep fried wings, which come with some of their own oil and dilute the sauce a bit. – air_hadoken Sep 9 2011 at 19:30

You can cook the wings in any oil, or by them selves, but the taste is slightly different. For the sauce, just take a bunch of dried cayenne peppers, soak them in vinegar, cook until soft, blend and add whatever salt or pepper, onion, celery you want. You can also start with fresh veggies and cook them down and then blend with the peppers.

oh yes!!
problem is you need the sour cream with blue cheese dip (or I do at least)....I think I actually eat more of the sour cream dip than the wings!!

I know Sriracha isn't exactly paleo, but 50/50 sriracha and coconut oil makes a damn fine wing sauce. Chopped basil and lime zest for extra credit.

I like to steam the wings (ala Good Eats), then let them chill for a few hours (makes them sticky/fatty on the exterior) then grill them outside. Gets a very nice crispy wing, tossed in the above sauce... very good stuff.

Actually, I just use franks red hot sauce on its own. I do not consider any dairy to be paleo personally, so I suppose im outta luck – Joy Sep 9 2011 at 17:31

Some people who avoid dairy still use ghee, so you could try that if it fits with your view or paleo. Otherwise, you could use coconut oil, palm oil, beef tallow, or lard. But I think some kind of fat would help with the mouth-feel and flavor. (When I make wings, I fry them in beef tallow. I then make the sauce with butter, but I bet using the beef tallow I fried them in would work quite well. Maybe I'll try that next time.) – maurile Sep 9 2011 at 17:59
