I did incredible with paleo over the summer and gained so much muscle, but now that I'm back at school it's become a lot harder for me. With homework, sports, and work I feel like it's just so much easier to grab a bagel or something. I do have the time to cook, but I'm always taking the unhealthy and easy route. Can anyone come up with some good meals that I can have at lunch and after school? thanks so much!
best advice i can give you is to find some time on the weekends and prepare things in bulk (I make lara bars, chocolate bars, protein pancakes, cook chicken, make broth)...and then make individual servings.
The other op is having boiled eggs, canned tuna, frozen fish fillets individually wrapped...cheese slices if you do dairy...anything to calm the hunger while you prepare something helps.
crock pot meals are easiest and again you can do in bulk, ie: meatballs, sauces and freeze in small baggies.
it does unfortunately take some forethought but the pay off is worth it.
I keep up a blog and devote a significant portion of it to recipes. Right now I have over 150 paleo/primal recipes online and add about 1 per day.
Between working full-time as a personal trainer, having a wife, and everything else, my meals need to be quick, relatively cheap, and taste good.

Otherwise, you can do just about anything with eggs, salad/meat combos, coconut milk/butter/oil, and various types of greens/veggies sauteed in various kinds of tasty fats.
I like having baked boneless chicken thighs in my fridge to munch on if I need a quick meal. Boiled eggs are good, so is straight Kerry Gold butter. Hell, I even eat raw bacon.
My faves are paleo chili and paleo meatloaf.
Puerto Rican beef, Sweet potato hash, salmon patties, zucchini rolls are all recipes in Everyday Paleo that I find pretty quick and easy to make on busy nights. Also any fish filets are great in pinch since they only take 10-15 minutes to bake. You can do a quick veggie saute while its cooking and viola- perfect paleo meal in under 30 minutes- Fan-tastic! I second what Kelly said...it really makes a HUGE difference if you can take one day out of the week to prepare meals for the week. I typically do this on Sunday so I have food for the week...I'll make something in the crock pot, make a chili/soup/stew and freeze portions of it, chop up all my raw veggies so that it literally takes 2 minutes to make a salad (just grab a handful of these veggies + protein and you're good to go), roast sweet potatoes/other veggies...you get the idea. I struggled a lot with this when I was a student, and Im about to start grad school so I will definitely be putting these tips into practice very soon!
