I am currently eating Kale and Spinach as part of my daily meals. I feel like I should add another vegetable or two into the rotation. I am currently thinking about avoiding night shades. Which vegetable or two should I add in?

If you're really into greens, I would recommend that you check out swiss chard (both green and rainbow varieties are very tasty, like BIG spinach leaves), collard greens (boiled with a ham hock and a couple pecans!), mustard greens (spicy flavor), raddichio (the red cabbage-esque things), green/red cabbage, bok choy, napa cabbage (good for making kimchi), and even radish and beet greens.

I like to cook mine in plenty of nice coconut oil, ghee, lard, or butter, lightly roast them with garlic and oil, or, if I'm going raw, blend them into smoothies.

Spinach and kale, in addition to other hearty greens, are my go to veggies that I eat daily with the addition of a few more. Outside of these, and tubers, I keep as tight to the season as possible so I get the freshest. Right now sweet potato greens are available and they're super rad and tasty. Amaranth leaves are good cooked or raw. Cauliflower is amazingly versatile and would be great to play with and is always available.

I agree with going to the Farmer's Market. In my opinion, if I were you, I would just pick up something new each week and see what you think. Go early with a coffee or tea and wander around, talk to the farmers. You might end up with more than just one or two new ones :)

And if you want some cheap bargains, go when they are closing, you might get good deals of some bulky items. I once got carrots and turnips for free :) Depends how lazy they are i guess, here they need to pack all the stuff to their vans and drive away back to farm. – Jan Sep 17 2011 at 13:01

Head out to the farmer's market and see what's in season in your area. Summer squash, cucumbers... Pumpkin is about to be in season. I would suggest an orange/yellow starchy vegetable to balance out the leafy greens.

Broccoli and brussels sprouts! On days that we don't eat kale or collards, we eat those.
