Does anyone use coconut flour as a source of protein and fiber in their smoothies? To make two servings, I have been using a mixture of 5 tablespoons of coconut flour, 2 cups of raspberries, one banana, and two cups of coconut milk. By my calculations, you get around 22 grams of dietary fiber for each serving. Any thoughts?

Given the immensely absorbant nature of coconut flour [at least twice that of conventional wheat flours], 5 tablespoons seems an awful lot to be consuming in that amount of liquid.

If that were myself, I'd be worrying the smoothie would be setting like cement inside me.

completely agree. ingesting that without a lot of compensatory liquid doesn't seem like it would promote motility. – ben61820 Sep 22 2011 at 16:04

Wow. Just looked on my package and what you're drinking, the 3oz of coconut flour, has about 40g of fiber and close to 20 for protein. Usually when people make their protein shakes they only use about a spoonful if they are utilizing coconut flour - or a little less as they don't like the gritty texture.

This is kind of amazing me.. I would be afraid to leave the house! I don't want to be too forward but are you at all bloated belly and not using the loo easily? As mentioned in another post.. cement. Would love to know why and how you came to want to imbibe these levels.

Personally, I would rather chomp my protein and fiber and not drink it.

I agree, 5 tablespoons seems like a lot - that's roughly equivalent to half a cup of wheat flour in baking.

I'd use shredded/flaked coconut instead to avoid the absorbency issues. Plus it's cheaper per ounce, though I'm not sure how the fiber content compares by volume.
