I know ice cream isn't paleo but I love it so I'm going to to try and make it as healthy as possible and still eat it. Everyone has their vice.

Currently doing a paleo challenge which means no dairy, dying to try this with grass fed cream once the challenge is over.

My paleo ice cream:

2 cans coconut milk (Thai Kitchen - coconut milk, guar gum, water)

4 pastured egg yolks - big, orange yolks

1 Tablespoon local honey - honey guy at the farmers market, you're the shiz.

2 teaspoons vanilla extract

1 teaspoon sea salt

Heat it all up in a pan for 10 minutes, put it in a bowl, put the bowl in the fridge for 2 hours then put it in the freezer, stirring every 30 minutes until it's hard. Believe me, you're going to have incentive to check it every 30 minutes, the in between frozen and liquid stage is pretty awesome.

From what I can see:

Seems like a good way to include a few more egg yolks in my diet

Full of good energy yielding fat from the coconut milk

Honey in general seems to be a pretty awesome syrup of nutrients with added allergy fighting potential and doesn't seem to be as harmful as regular sugar (thanks Chris Masterjohn.)

The whole mess only has about 25 g of carbs in it, good for those low carbers.

I'm going to keep eating it but I'd like to see it hacked either way, maybe share the recipe with a few people.

How bad could this be for me? Not trying to lose weight in fact, I could use a few pounds of muscle. I know, I'm a jerk. Hack it. Thanks.

Thanks for waking me up cliff haha, it usually takes me 3 or 4 sittings to get through the amount this makes and I only ever have it after dinner and not every night. Eating a pound of pastured meat a day and loving on veggies, this is not all I will be eating ;) – Nutritionator Sep 28 2011 at 16:49

"Hey Ferb! I know what we're doin' today!" Okay, I'll hack it, if that means hack at it. Gonna make some tonight. You could probably live off this stuff... – Dave S. Sep 28 2011 at 16:54
Plus one for the funky tags. Love 'em! – gilliebean Sep 28 2011 at 17:54
Speaking of Phineas and Ferb, "Nutritionator" sounds like something Doofenshmirtz would come up with to conquer the entire Tri-State area! – vdh1979 Sep 28 2011 at 18:04

I don't see the need for any kind of sweetener at all. Cream tastes pretty awesome as it is. – Henny Sep 28 2011 at 20:01

The only problem I see is the canned coconut milk, guar gum personally causes me digestive issues. You could make homemade coco milk to make it even better. Using grassfed cream would definitely be the best option if you tolerate it but I think you covered that. Definitely not bad for you, maybe if its the only thing you ate? :P

I'm also not huge on the guar gum but I don't have a noticeable aversion to it and it's the most natural brand I can find that's under $2 a can. Suggestions for alternatives are more than welcomed! – Nutritionator Sep 28 2011 at 17:04
If guar gum isn't causing you problems, then this looks like a great recipe. – gilliebean Sep 28 2011 at 17:56

The only problem I can see is that you didn't add cocoa powder...

A very substantial problem at that. I've always been a vanilla kinda guy but good cocoa powder would be a great addition. – Nutritionator Sep 28 2011 at 18:08

My major problem with this is that I can't just eat a little and usually house everything. That sounds delicious though. ICE CREAM WOOT!

Ayam brand ccocount cream/milk in a can doesn't have any additives. We get this here in Australia, not sure if available in the United States.
