I know ice cream isn't paleo but I love it so I'm going to to try and make it as healthy as possible and still eat it. Everyone has their vice.
Currently doing a paleo challenge which means no dairy, dying to try this with grass fed cream once the challenge is over.
My paleo ice cream:
2 cans coconut milk (Thai Kitchen - coconut milk, guar gum, water)
4 pastured egg yolks - big, orange yolks
1 Tablespoon local honey - honey guy at the farmers market, you're the shiz.
2 teaspoons vanilla extract
1 teaspoon sea salt
Heat it all up in a pan for 10 minutes, put it in a bowl, put the bowl in the fridge for 2 hours then put it in the freezer, stirring every 30 minutes until it's hard. Believe me, you're going to have incentive to check it every 30 minutes, the in between frozen and liquid stage is pretty awesome.
From what I can see:
Seems like a good way to include a few more egg yolks in my diet
Full of good energy yielding fat from the coconut milk
Honey in general seems to be a pretty awesome syrup of nutrients with added allergy fighting potential and doesn't seem to be as harmful as regular sugar (thanks Chris Masterjohn.)
The whole mess only has about 25 g of carbs in it, good for those low carbers.
I'm going to keep eating it but I'd like to see it hacked either way, maybe share the recipe with a few people.
How bad could this be for me? Not trying to lose weight in fact, I could use a few pounds of muscle. I know, I'm a jerk. Hack it. Thanks.
