So I'm watching Man vs. Food on the Food Network, and I see Adam chowing down on a breakfast pulled pork waffle. The pulled pork I can do. I'm not very into Paleo baked goods, so the waffle poses a challenge, and I don't recall having ever seen a waffle recipe anywhere. Somebody please hack me up a waffle recipe. Bonus points for recipes using as little nut flour as possible.

Love the fact that you're watching Man v Food. I'm not really sold on the new Man v Food nation spin, but the original series was one of my favorite guilty pleasures. I kind of riffed on the measurements and may have taken the inspiration from someone else's tasty blog - but I combined approx 4 eggs, about 3/4 c almond flour and 3/4 coconut flour, sea salt, 1/2 kefir, 1 tbs coconut oil, 1 tsp baking soda, cinnamon and poured into the waffle maker. Also good w sliced banana and walnuts or berries or just some good butter. They're fluffy - a different texture than expected but pretty satisfying. Some savory pork sounds delectable

Here you go:

  • Four eggs-
  • 1/4 cup coconut flour-
  • 1 tablespoon heavy cream-
  • 1/4 teaspoon baking soda-

Blend until moistened, add to your heated waffle maker but note that it's not going to spread out like regular waffles so practice on one or two.

If you want a sweet one ever, just add a bit of whatever sweetener you use plus some baking spices such as cinnamon, nutmeg, etc :)

This is a dairy product free recipe that I threw together a while back...

1 1/3 cup egg white protein (vanilla flavored) 1/3 cup coconut flour 2 eggs (omega 3 enriched) 1 1/2 cups cultured coconut milk 1 banana (mashed) 3 tbsp. coconut oil (reserve 1 tbsp. to grease the skillet) 2 tbsp. potato starch 2 tbsp. baking powder 1 tsp. cinnamon 1 tsp. sea salt 1 tsp. real vanilla extract (reserve for topping pancakes) 1 tbsp. organic maple syrup 1/2 cup wild blue berries 1/4 cup chopped walnuts

You could definitely eliminate the maple syrup, blue berries, and walnuts given that you're looking to slap some pulled pork on them.

Waffles are hard. I do know a sweet pancake recipe! They are fluffy and moist. My family makes a pile of these on the weekend.

I made several different recipes for paleo waffles yesterday and came up with what I think is the best paleo waffle recipe! For best results use the almond flour listed in the recipe, but I did make a version that subbed coconut flour for the almond and added and extra 1/4 C water. Either way, they are yummy.
