In my grocery store I`ve seen they have frozen blood. The only food I know you can make from it is "blood pudding" but that contains a lot of sugar and wheat. Do any of you know about a 100% paleo dish to make from blood?

The Spaniards eat something called "Sangre encebollada". Google it. As far as I know the ingredients are all Paleo (except the wine). Its basically sauteed onions, garlic, bay leaf, a little hot pepper. Then the blood is cut into cubes and added. Lastly, a splash of wine is added and it's left to cook. |

You can make fergus hendersons world famous "blood cake" or some boudain noir. But blood should be fresh, making it from frosen isnt worth it. http://www.nosetotailathome.com/2009/02/blood-cake-and-fried-eggs/ I have made it once, its great, needs to be slowly cooked in 65C waterbath. Blood overcooks very easily. If you want a receipt, i can scan it.
