In my grocery store I`ve seen they have frozen blood. The only food I know you can make from it is "blood pudding" but that contains a lot of sugar and wheat. Do any of you know about a 100% paleo dish to make from blood?

Here are a couple of blood sausage recipes, I've yet to make them myself, but they do look promising. They are both wheat, sugar, and dairy free.

Blood sausage is what comes to mind for me.

yea, thats the same as "blood pudding". The recipes I`ve found contains a lot of wheat/grains, sugar and milk, so not so very paleo. – norwegian girl Sep 29 2011 at 18:21

The Spaniards eat something called "Sangre encebollada". Google it. As far as I know the ingredients are all Paleo (except the wine). Its basically sauteed onions, garlic, bay leaf, a little hot pepper. Then the blood is cut into cubes and added. Lastly, a splash of wine is added and it's left to cook.

You can make fergus hendersons world famous "blood cake" or some boudain noir. But blood should be fresh, making it from frosen isnt worth it. http://www.nosetotailathome.com/2009/02/blood-cake-and-fried-eggs/ I have made it once, its great, needs to be slowly cooked in 65C waterbath. Blood overcooks very easily. If you want a receipt, i can scan it. Would make it again, but havent been able to source truly fresh blood anymore.

I have been craving some blood cake lately. In finland we serve it with mashed lingonberries. I like it a lot, but finnish blood budding is no where near as good as ferguses.
