I am alergic to nuts and have tolerance issues with coconut and chocolate. Any thoughts for Paleo dessert recipes without nuts, coconut or chocolate?
Baked apples with cinnamon and honey (some cranberries are good too) Also, fresh figs..they remind me of fig newtons from my prepaleo days
I'm sure others have good ideas but since I don't eat dairy that's all I got :D
Take some seeded DATES, and wrap them with a length of raw BACON. Secure with a toothpick and place on baking sheet. Bake at 350F till bacon is as cooked as you want it to be. This is DELICIOUS! Hits that salty, sweet, crispy, gooey spot all at once!
I pour some heavy cream over frozen wild blueberries. The cream freezes around the berries and is kind of ice creamy, and super easy!
Pour vanilla and some drops of stevia into cream, cook it. Then add gelatine and put into refrigerator for a few hours. Serve with strawberries or blueberries.
2 cups cream, 1/2 cup milk, vanilla, stevia. Heat milk and 1/5 cream, add vanilla and stevia. Whisk other cream and pour in vanilla cream.
Some egg yolks, a banana, 2/3 cup butter, milk. Mix everything together. Makes a nice breakfast shake.
Since you do dairy, some frozen fruit pulsed with some heavy cream (or the fat that rises to the top of your coconut milk) in your food processor would make a nice treat, I imagine.
Yesterday, I was craving frozen dessert like mad, and wound up pulsing some banana and frozen cherries together (about equal ratios -- about 100-125g each). I fed half of it to my fella and ate the other half myself (but, I drizzled melty choccy on mine -- sorry!). It tasted just like soft serve, equated about a serving of fruit, and squashed my sweet tooth like a charm. Yummish.
Gelatin desserts are also pretty amazing. I like to mix pumpkin, pie spices, a bit of stevia (or sweetener of choice) and a non-dairy (or dairy!) of choice with a sachet of gelatin and let it sit until firm. It's like pumpkin pie, except not. ;D You can also make panna cotta with gelatin, as well. (And since I'm obsessed with my food processor, if you whip your gelatin after it's set, it gets foamy and mousse-y.)
If you can eat dairy I have a good one:
Whipped heavy cream with frozen blueberries and small pieces of frozen pineapple. Makes a good ice cream and it is really fast dessert!
If you have not seen the one ingredient banana ice cream recipe look it up. It is a banana, frozen and then pulsed in a food processor or blender until creamy. It sounds like what you are looking for.
I would also take a look at egg custards. I am not sure what you allow yourself for sweet, but custards can be made with eggs and honey and little else (the cooking is tricky and you have to really beat the yolks and add the honey right after you take it off the heat). Folding in some white can make them lighter. If you allow yourself flavored liquor the basic recipe can be taken all sorts of directions.
Nuts! Coconut! Chocolate!
