All I've got now is a little rival crockette, no knobs, no switch, just one low temperature which works fine for what I've done so far. But now I wanna cook heart meat, which calls for a boil & simmer. I can bring up the boil in the microwave, but the crockette falls shy of full simmer, I think. Do other crock pots have simmer options? The ones with knobs & switches?

i wrap mine in bacon and slow bake for 5 or 6 hours in a toaster oven. if i need to go out, i wrap it in foil first and it can go for 10-12 hours. – sage_ Oct 11 2011 at 19:30

Most adjustable crock pots will hold a simmer on the LOW setting, and a boil on the HIGH. I agree with the others about grilling the heart, however.

yes, this is true about crockpots. mine all simmer on LOW and boil on HIGH, but the larger the crock, the lower of a simmer on LOW. Some of my tiny crocks will almost boil on a LOW setting if they're left there for too long. – Sarah Oct 25 2011 at 23:12

I have a CrockPot brand crock pot--yes I do!--and I use high to bring the full pot up to a simmer and then low as long as desired. No boiling, just an easy simmer. – Nance Nov 8 2011 at 21:26

Cook it Hungarian-style.

Brown heart with a good amount of fat in a pot (or whatever). Transfer to slowcooker, and then add in plenty of onions, wax peppers (if you got them, otherwise red peppers), and then a good amount of paprika. Salt to taste, and then slow cook on low for 6-8 hours.

Otherwise, you don't need to boil then simmer a heart. Just toss it in, and let it go.
