Soups, stews, roasts... what's your favorite recipe?

I know you asked for a crock pot recipe, but if you have the time to use the oven for 6 hours follow this recipe.
It does a pork shoulder in the oven for 6 hours at 300 degrees. I made it and it was the most epic pulled pork I have ever had. This is coming from a BBQ aficionado. Serious.
Menudo. But recipes all involve hominy and seasoning and stuff that I dont use, so I don't follow a recipes. Okay, maybe onion, but it goes in last. Just do pork hocks and tripe, nice and soupy, that's all. Tripe got no flavor, so it's like noodles, but it gives beefy satisfaction which pork lacks.
I'm getting more and more fascinated lately with the possibilities of tripe. Gonna try chunks semi-frozen in my food chopper, see if I can really shred it up and do something interestinh. Anybody want tripe layer cake?
Another chili verde recipe, which is the best imitation I could make of a restaurant dish I ate regularly 30 years ago. I might have already posted it here, but whatever, you asked.
Slow roast a cheap fatty 2-3 lb pork roast until it falls apart. Crockpot all day with a little water, onions and S&P works best.
Strip off the meat and some of the soft fat. Transfer this to a skillet and add half a jar of salsa, a small chopped onion, some garlic and a can of sliced green chili peppers. Cook like a stew until it thickens. A little bottom scorching will improve it.
Cook up some rice in a steamer. Put a cup in the bottom of a casserole, and mix it with some of the stew juice from the skillet to make a sort of Spanish rice. [You can skip the rice, but using it increases the food reward by at least 2.7 times.]
Layer the skillet-cooked meat stew on top of the rice in the casserole. Shred 1/2 lb of a melting cheese like jack or cheddar over the top. Top this with sliced green onions, a small can of drained sliced black olives, and a chunked avocado. Broil in the oven until the cheese browns and bubbles.
This dish tastes better rewarmed a day after you make it.
My husband and I have been Paleo for 6 weeks now and are feeling so good. I was a vegetarian for 36 years but I have recently introduced chicken and fish back into my diet. This recipe is good for those days that I just want to veg out, and have an easy, warming hearty meal at the end of the day. It's a crock pot recipe.
Put all ingredients into the crock pot and cover with chicken stock. Cook for 5 hours on medium. Stir every so often to make sure the stock cubes dissolve and get distributed. This helps improve the flavor without the meat. Take out the bay leaves before serving.
