Today I made my first batch of paleo mayo. It was fun, it tastes good... but now what? Historically I used mayo on sandwiches, which are no longer an option. So what are some good uses for mayo? All I can think of is salad dressing and making chicken/tuna salads. Any good recipes or suggestions?

Mix in garlic, lemon, and either some hot smoked paprika or some of the sauce from a can of chipotles in adobo, or, if you are feeling very fancy, some gently toasted saffron threads. Then, dip lobster or crab or really, any other kind of seafood in it. You can also use it as a condiment for seafood stew. Be prepared to swipe the bowl with your finger. This is the closest thing to crack you will ever eat -- I feel almost irresponsible telling you all about it. Also unreal on French Fries, lightly steamed vegetables, as a sauce with tuna tartare, etc. etc. etc.
Put a hot egg (fried, scram, whatever) on a lettuce wrap with tomato and bacon... and like 3 lbs of mayo. Mmmm... best with green onions or a little cheese if you can have it.
I've used it to make chicken salad. Boil breasts or thighs - or a mix - then shred and mayo up! I make a big batch and leave it very lightly seasoned, so that each time I have some I can season it differently.....with garlic salt or Old Bay, mmmmmmm.
have a pig pickin! put pig in large, barrel shaped grill/smoker. wait several hours. when the meat is falling apart, pick out the yummy bits, season with something a little spicy (like vinegar red pepper sauce) and drizzle with mayo
