Almost 2 months ago I decided to go on Bee's Candida Diet. I don't get acne anymore, feel generally better, but I'm concerned about one thing : Bee recommends taking 20-30k of Vitamin A daily. I was vitamin D deficient and read that Vitamin A is toxic quickly.
What are your thoughts about Bee's Candida Diet?

Bee is a nutcase. Just one read through of her reasoning should send you running. First off... it takes glucose to fight fungal infections. Paul Jaminent has stated this several times and I have noticed anecdotally a few VLCer's and ZCer's developing fungal infections while on the diet. Thats not to say that everyone will get one when going VLC or ZC, as many don't, but the science is in the favor of having some glucose to fight the fungus.
She also claims the body can make it's own probiotics... which is hilarious considering anyone who takes anti-biotics and ruins their gut flora will tell you.. that stuff just doesn;t come back when the body is ready. She also thinks candida is literally the root of ever disease... as if we wouldn't die or get sick if it weren't for candida!
If your doing great on VLC, the great! But please please don't believe a word that woman says.
I tried the diet, and it made me feel extremely sick. She makes you take way too much supplements without taking into consideration individual needs. She also gives potentially dangerous advice by telling people to ignore any potentially life threatening symptoms, such as palpitations. She makes you believe every symptom you have while on the diet is "die off." I would personally steer clear if I were you.
I did Bee's diet for almost a year. When I finally reached the recommended amount of coconut oil each day, I was feeling better. However, I did gain weight. Also, my cholesterol was extremely high. I even went off of the diet and added grains, fruits, beans and chocolate back. (EEK!) Needless to say, I felt much worse. My husband who always said my diet was not connected to my health, told me to go back on my diet immediately! Now I'm just following a paleo low carb diet and including coconut oil (usually about 1 tbsp with each meal.)
I'm not 100% positive if I have candida. I've been sick with chronic fatigue syndrome- fatigue, headaches, body aches, joint pain,sore throat for 4 years. There were a few concerns I had about her protocol. Like you, I was concerned about the high amount of vitamin A. Also, I didn't quite understand her one month of healing for each year you've been sick. Most of the time she states you were probably sick from birth.
Not sure if this was helpful for you or not. I was just interested to hear another person is following her protocol.
I also don't understand why she says onions & garlic are high in carbs ans should be moderated,while tomatoes,peppers etc. are ok. I thought onions weren't higher in carbs than tomatoes&peppers?
As long as you aren't pregnant and get enough vit D&K that amount of vitamin A is fine for most part.
The diet looks like a pretty standard VLC diet, I would personally use fitday.com to make sure your hitting nutritional DVs.
Do you have candida?
If you take Vit A in the for of Beta Carotene you don't have to worry about. Beta-carotene needs to be converted to retinol in order to active. It's considered a precursor. Some people do have trouble converting it. If you take retinol, there is a greater chance for toxicity but you can also dose D in compensation. Or just eat liver twice a week. The ideal A to D ratio is said to be 10:1.

Just answering my own question : it worked until winter came, then I got sick and it got worse and worse and Bee didn't have any answers for any of my questions. While I tried to give her a chance, she obviously is the type of person that believes crazy stuff as long as it works for her. The simple fact that she tells everyone to take exactly the supplements she takes is already confusing.

i'm all for a low carb, grain free and sugar free diet & i stuck with it for about a month.... theyre like some weird cult where they all worship bee, so i took it all with a pinch of salt (celtic, of course! :P). then i got a really bad bout of tonsilitis and i posted on the support group asking for help, advice suggestions and got no reply, in fact my message just vanished ... i was like umm, wtf? thanks bee so i decided just to stick to my own low carb rules and take smaller doses of the recommended supplements, i definitely think a lot of her views are a bit bonkers and its all a bit extreme.
sure theres been lots of success stories, but of course there is - considering that most of those people have just come off a typical western diet which is loaded with carbs, sugar and 'low fat' processed foods... anyone who has any common sense can follow a low carb low sugar diet and feel 60% better within the space of a few weeks. but in the long run, who can realistically commit to a life of never being able to eat out at a restaurant or enjoy a square iof chocolate or a glass or wine, and basically carting an array of pills and coconut oil around with you every where you go... it's fairly ridiculous.
