My husband and I have different responses to coconut so just wondering if anyone has any thoughts or theories. We both eat pretty high fat about 45-65% day. We use high quality coconut oil like Nature's Way and Tropical Traditions Coconut Cream.
The hubby can scoop a teaspoon of coconut oil or coconut cream with each meal and be okay. I gag on this. He actually eats extra coconut oil when he has any time of gut irritation (straight from the jar). Both of us can eat coconut oil, coconut cream, and coconut milk cooked in recipes. We also have no trouble with coconut water from fresh green/brown coconuts, or the commercial waters like Vita Coco, O.N.E., and Zico.

The kicker is I can eat the macaroons and not have a response! Is there some pattern here I should be aware of? I'm confused why some coconut ingredients are giving some problems but not others??!!
Not sure if this helps or not. But it's from Rob Woll's website and it concerns coconut. If the milk or cream has guar gum in it it tends to do the same thing to me.
I once had about half a jar of the Spectrum EVCO as a threshold experiment. I had heard of people getting sick from EVCO and was curious how much it would take... I had diarrhea, nausea, flush skin, and about a 99-100 degree temperature. All very uncomfortable things. However, about 36 hours of nothing but water (because I couldn't keep anything down) I noticed a very calm feeling come over me and also noticed that a little fat/inflammation around my belly button that I had been trying to get rid of was gone.
I never did the other half of the experiment where I'm supposed to eat the same amount of the refined but I did switch to it as I noticed that it had none of symptoms associated with the EVCO except a slightly elevated temperature which I think is fine. I rarely eat coconut oil as source of fat calories anymore, but I do use it for some of my stir fry beef dishes and over medium eggs and sometimes I'll put a small half 1cm cube in my coffee.
I'm pretty convinced that it was the other compounds, fiber, etc. in the EVCO that caused the problem rather than the oil itself. I've read of people having similar experiences with the EVCO and not with the refined.
I think what's often overlooked with the coconut products is that they're processed foods just like many others we approach with caution.
How common is it for one person to eat an entire coconut in one sitting? I enjoy a little coconut, about a one-or-two-square-inch piece of flesh. That contains the milk/cream/oil of a natural portion in whole-food format. When you eat the whole meat, you get the "enough" signal pretty quickly.
In my cooking I try to maintain a natural portion size. Yes, I'll use an entire can of coconut milk as long as the recipe is for at least 4 servings. I'll use a thin film of coconut oil on the skin of poultry I'm going to roast.
You're free to eat as much as you like and enjoy, that's just my 2 cents.
Maybe in the baked goods it's just easier to consume more of the coconut than eating straight oil, so it causes the gut problems? In any case, just because coconut is great for 95% of people and it has such a following among paleos/LCers etc, doesn't mean it's good for you. I would just ditch the stuff that doesn't agree with you, and stick with what you like and doesn't trouble you. If that means no coconut, so be it. As I'm sure you know (judging by the fat content of your diet), there are plenty of other yummy saturated fats out there.
Brown rice syrup doesn't agree with me. I read somewhere that it can contain msg--not added but an artifact of the manufacturing process. As for coconut, when I first started eating and cooking with coconut oil, more than a tablespoon at a time would give me a stomach ache. Now I can eat more without problems.
