Did anyone see this article at the WAP website?

I know the study had a very small sample size but the results are thought provoking.

After reading this I won't have any guilt about eating uncured organic bacon.

I think your title is a bit misleading. The take-away I got from the article was that pork chops should be properly prepared (marinated in an acidic marinade) before cooking and eating them. The only advantage to uncured bacon is that it already comes that way with no prep required before cooking.
