I would like to hear some typical combos and amounts of stuff I should be putting into my eggs n' bacon meal. I usually use 3 eggs, 3 slices of bacon and 1/2 tbsp of butter but I feel like I could/should be doing something differently... any suggestions?

Saute some onions & bell peppers in the skillet, then add your eggs and mix it all up. Good way to get some veggies in with your protein :)

LOVE it this way! – Jenn Oct 19 2011 at 17:14
I forgot how good peppers and onions tasted! Add some minced garlic and it takes it to a whole new level. – Phazo Oct 19 2011 at 19:16
I've also topped mine with salsa and sour cream :) Not Paleo, admittedly, but still delicious! – Nemesis Oct 20 2011 at 0:51

At least one tbsp of butter. Usually add peppers, onions, mushroom, and spinach to the omelette.

Where do you get the duck fat? I've been looking to make duck confit. – trjones Oct 19 2011 at 16:48
I get it from a gourmet market / butcher here in Denver. I imagine if you can't find it locally you could get it online. – Erik Oct 28 2011 at 16:57

I'm gross, so let's establish that upfront.

Here is what I just ate:

Three eggs fried up in coconut oil.

Then I steamed some spinach and prepared some canned salmon by adding in home made mayo (from Primal Blueprint Cookbook) and red bell peppers and onions.

Then I globbed them all together - the eggs, the salmon and the spinach - and mixed'em up and ate'em.

Good stuff! :)

You would have almost had a supreme Salmon Cake if you had globbed together all the raw ingredient first, then cooked -instead of the other way around. Then used the homemade majo on top as a condiment! – Senneth Oct 19 2011 at 16:36
Why are you gross? – Allie Oct 19 2011 at 17:08
Maybe I'm not gross. People at work think I'm gross when I'm eating sardines or stuff like this. – Anonymous Chump Oct 19 2011 at 23:27

Breakfast Protein Ideas:

1) scrambled/easy-over/medium-over eggs and bacon or sausage

2) scrambled/easy-over/medium-over egg with leftover ground meat - could be taco, chili, etc.

3) steak and eggs!

4) hard-boiled eggs with sliced avocado/guacamole

We always have some starch like sweet potatoes, plantains, or bananas with heavy whipped cream! Sometimes a side of leftover veggies depending on the day!

We cook eggs in butter, ghee or leftover bacon fat. We cook meat in tallow.

Add some fermented sauerkraut (especially homemade) to the meat after it's cooked and what a meal!

I add mushrooms, onions, garlic, 4-5 Tbsp coconut milk, dill and mix it very well. Braise some slices of kohlrabi then top it with this mix.

Bacon isn't a regular part of my diet, but if I do have it I cook the eggs in the bacon fat. I don't add an additional fats.

Most days when I have eggs I saute up some veggies in butter or ghee--I just use whatever veggies I have on hand with particular preference to any leftover veggies from last night's dinner. Then I usually dice up and throw in whatever leftover meat I have left over from the night before. Once that is all heated through I pour in a couple of beaten eggs for a nice hearty scramble.

About once a month or so I cook up a package of chicken livers or livers & hearts and chop up a few of those to put in my morning scramble with veggies every day until they are gone (usually 3-4 days).

Breakfast is easy and has to be quick for me... I am doing the Leptin Reset, so need to be eating it within 30 min...

3 eggs cooked Coconut Oil (2-3tbs), Chopped onions or garlic if I have it.

Then 7+ ounces of some kind of meat

Just lately I've fallen into the habit of doing some chicken livers first in an itty-bitty Teflon skillet, then a couple of over-easy firm eggs (both at once) which cleans the skillet spic and span. Don't even need a whole paper towel for cleanup, just a Kleenex will do. Cool, huh?

My lunch today is a Chicken liver, red onion, and coconut oil mix. Never had em before, and its my 2nd liver attempt since starting paleo. Fingers crossed... – Jeff Rowe Oct 25 2011 at 17:33

I sear/cook an 8oz steak (med-rare) in a pan with some seasonings and coconut oil. Steam about 60-80g of raw baby spinach in the micro w/ about a tablespoon of kerry gold. Fry up 2 eggs in a small non stick pan, using EVOO, Coconut Oil, or Kerry gold (depending)

I eats the every am, usually I premake it and heat it up when I get to work...

Goodness that sounds good!! :) – Schatze Oct 19 2011 at 17:30
It is delicious, and never boring... but it wouldn't be possible if I had to depend on grass fed beef, which is psychotically expensive here. unless I buy it as side/partial side of beef. I eat grassfed when i can, but otherwise I have found a great source of standard beef steaks for about $3 a lb... and they are delicious... – Jeff Rowe Oct 25 2011 at 17:31

I like my morning eggs over-hard, so the white and yolk are kind of separate. If I have bacon I'll cook them in the leftover bacon fat but if not just in butter. I've been addicted to truffle salt lately on my morning eggs. :)

If it's eggs for dinner they're scrambled with meat and veggies (my husband hates separate yolks, he's crazy) or cooked as a frittata if I'm feeling fancy.

2 Tbsp pastured butter

1 pound of grass fed ground beef

8-10 pastured eggs

salt and pepper to taste

Brown the ground beef and scramble the eggs right in the same pan

After a hard workout I could down the whole thing but I usually get two servings out of that. It reheats just fine.

One of my favorite dinners: sauteed ginger, green onions, red chilis, garlic and clams in coconut oil. Then scramble eggs in it. A little tamari and it's awesome.

I make up some quick hollandaise sauce to pour all over my eggs (any style eggs). Lots of easy recipes for hollandaise out there, and it comes together in a few minutes once you get the hang of it.

Saute onions and garlic in coconut oil. Add some sort of chopped greens (I prefer collards) and cook down. Mix in chopped meat if desired (or just serve with bacon). Crack eggs on top and put lid on it to cook eggs to desired doneness.
