I never can seem to consume a can of coconut milk in the 2-3 days it says it should be consumed (on the can). It's not that I don't want to - but because I'm trying to lean out I have a feeling a coconut milk smoothie wouldn't be the best after dinner treat. that being said, can i freeze leftover coconut milk to use in smoothies or even savory dishes? would that work? any other ideas for what to do with it?

i use my ice cube tray for any leftover coconut milk as well as other bits of leftover liquids i don't want to toss. freeze then dump into a ziplock bag, then grab as i need. – jesuisjuba - paleorepublic.com Oct 20 2011 at 14:18

Yes, it freezes perfectly well; I use silicon ice cube moulds and then pop a few out when I'm making a curry or something else that needs a creamy texture.

Why have I never thought of the ice cube tray idea? This is wonderful! I'm one of those folks who stored the leftover milk in the fridge, but never finished it off. I hated opening a can only to see that half of it would go bad and have to be thrown out. I'm opening a can of coconut milk tonight, just so I can have handy-dandy sized cubes for cooking in the future. – Flag Gal Oct 20 2011 at 21:04

Couldn't recommend these more highly for refrigerator food storage. Our extra coconut milk lasts about two weeks in these. All our other leftovers, too.

We don't throw food away any more.

You can cook a curry dish that will keep for a couple more days.

I've set my open/uncovered can in the fridge for 4-5 days without any detectable change in quality, flavor or consistency. No preservatives noted on the can, just coconut milk and some guar gum. For smoothies, a can makes 5 servings.
