I never can seem to consume a can of coconut milk in the 2-3 days it says it should be consumed (on the can). It's not that I don't want to - but because I'm trying to lean out I have a feeling a coconut milk smoothie wouldn't be the best after dinner treat. that being said, can i freeze leftover coconut milk to use in smoothies or even savory dishes? would that work? any other ideas for what to do with it?

Yes, it freezes perfectly well; I use silicon ice cube moulds and then pop a few out when I'm making a curry or something else that needs a creamy texture. |

I've set my open/uncovered can in the fridge for 4-5 days without any detectable change in quality, flavor or consistency. No preservatives noted on the can, just coconut milk and some guar gum. For smoothies, a can makes 5 servings. |
