I am giving up eggs for a while to see how I feel. Since I would usually pair eggs with smoked salmon (from Trader Joe's), what other tasty meals can I make with smoked salmon? Thanks!

I just slice the salmon, the lemon, and avocado and put on the seaweed wrapper and sprinkle the micro greens. Very good.

Just put together a lettuce cup with tomato, avocado, chives, bacon crumbles, goat cheese crumbles and smoked salmon. I drizzled a little dressing I made with dijon, lemon, evoo and scallions. Success. Will do again

Last night I put together a salad with smoked salmon (local Hoodsport, WA) sour cream, brined cucumber slices (salted, rinsed briefly, patted dry, apple cider vinegar bath, shake off after about fifteen or twenty minutes and chop) scallions chopped, dill weed, celery seed, and garden lettuce. We licked the bowl. To fancy it up, add olives, cherry tomatoes, lumps of brie or Gruyere cheese and you have a fabulous dish.

There's a Gruyere to look for: Cave Aged Swiss Gruyere .. it's too good to describe, fascinating in texture and perfect for French onion Soup. Skip the bread for paleo. Try a sprig of parsley, or even a few sauteed asparagus tips.

Smoked salmon and avocado slices, on dehydrated seed crackers if you're into that. Or, make a guacamole and mix the salmon into that.

chopped up, with chopped bacon, chives, mixed into cream cheese is very good and makes a good "scoopable" for celery sticks.

However, I don't eat cream cheese very much (lactose problems) so I usually end up making bacon+green onion wraps where the salmon is the wrap.

I just smoked up another batch of filets. I crumble them into stir frys with onions, garlic, butter and capers. I also eat them over red cabbage and onion salad.

I smoke the salmon over wood and the flavor comes out very strong. I smoke it topped with bacon strips for seasoning and to add some fat.

At Hannaford market sometimes they sell the smoked salmon "scraps" for something like 10 bucks a pound in the fish fridge. They are just as good and I just eat it straight. YUM. – Dan May 22 2012 at 18:11

I slice up a honeydew mellon and wrap a piece of smoked salmon around the melon. BEST. BREAKFAST. EVER.

You don't need much of a recipe for smoked salmon. I had it with eggs this morning but it also pairs nicely with any combination of tomato, cucumber, onion.

And I second the cream cheese recommendation but I have it more often with whole-fat greek yogurt.

Another way to make smoked salmon more interesting/tasty is to buy it directly from a quality fish smoking place. Or salt your own like my mom used to do. There's a notable quality/taste difference. A place right near my house offers a different variety of salmons they smoke with different seasonings - dill is a natural match if you're into that flavor.

Also check out other smoked fishes like herring, sturgeon, whitefish.

If you do dairy, I like to wrap smoked salmon around a chunk of cream cheese & sliced onion. Smoked salmon would be great on a salad too.

I wish I could eat cucumber :( But it repeats on me really badly, it's so odd! I'm not sure if it's the water content or if there's an enzyme/component in cucumbers that I'm sensitive to. I love them but have to avoid them! – Mashanshell Nov 1 2011 at 19:25

Given that the OP stated she was giving up eggs, I'm not sure that your main suggestion is going to be much use to her @Eugenia!

My answer would be: why cook with it at all?! Smoked salmon is delicious, I could eat it all day - just pair it with some fresh veg and tuck in!

Add it to scrambled eggs. In fact, I cooked exactly that this morning: scrambled eggs as here: http://www.youtube.com/watch?v=zl-CWjwhwNQ&hd=1 and then I added bits of smoked salmon and chopped green onions (the green part). My husband loved it and he said that this was the best breakfast he ever had.

Another thing you can do is steam asparagus, and then roll a slice of smoked salmon around two asparagus stalks.
