I would love to eat eggs, as they are convenient and filling, but every time I eat them, I end up nauseated. I saw some people on here saying that they only eat the yolks and feel better when they do. Can someone explain why this is? Or have any experience being made sick by eggs with whites but not yolks themselves? Either way I will probably try eating some yolks on their own, but just curious. Yolk is starting to not look like a word anymore.
"One of the egg white functions is to protect the yolk against microbal attack using proteolytic enzymes, besides being storage of nutrients for the growing embryo and transport of nutrients into the growing embryo. Except for ovoalbumen, most of the proteins in egg white have antimicrobial, antibacterial or antiviral activity, some of these proteins are called ovomucoid, ovomucin and lysozyme, among others. These proteins may disrupt the integrity of the gut lining leading to increased intestinal permeability and lysozyme is the most harmful of these proteins in terms of membranolytic activity (breakdown of cell membranes). We recommend that patients suffering from autoimmune diseases to avoid egg white at the beginning as Lysozyme may increase intestinal permeability which is one of the contributing factors in autoimmune diseases. Another issue is egg allergy which is quite common."
I suspect that healthier chickens produce more of the defensive proteins that Seaburgers is mentioning (along with a whole lot more nutrients compared to battery hens producing low quality eggs. Eating a few of the latter eggs here and there throughout your life is going to be different than eating several whole pastured eggs per day, which is why I think people with no egg issues before run into stomach upset when they make these changes.
I've been hard-boiling pastured eggs and pitching the white for a while now and I like it way more. At first the taste is disappointing, but after a while you just think of the white as a squishy extension of the shell.
heat up your skillet with some fat. put an egg yolk in your palm and "pinch" the sac around the yolk. drain the contents into your skillet. the sac is nutritionless and also causes indigestion. I just ate four of these drained yolks cooked gently in olive oil (only cooked for about a minute and looks like a little yellow omlette). I have heard this called "the fruit of the egg" and is what chicks "eat" while developing in the shell. eating the whole egg gives me nausea like you described, but eating the yolk only doesnt do that. hope this helps.
