Not quite about zero-carb, but here's a book by two ketogenic diet researchers, Jeff Volek and Steve Phinney, that addresses pretty much everything currently known about ketogenic diets for health and weight loss. It's become my favorite book on the topic by far.
I disagree with Melinda above about a zero-carb diet being unhealthy for most people. I certainly don't think it's necessary for everybody, and if plants don't make you sick in any way, you might as well eat the ones you like. But for me it's been close to a miracle (for weight loss, relief from terrible joint pain, and all-around health improvements)--the closer I eat to true zero-carb (meat and water, period), the better I feel and look. And there are plenty of others like who are doing just fine without plant matter.
