first, how bad are the bean gums in coconut ice creams? second, if i wanted to make my own coconut cream with coconut milk & rice syrup, how would i do that? do i need an ice cream maker, if so which brand?
As far as I know, the gums aren't bad. Guar gum comes from the guar seed and is often used to help with digestive and, well, pooping problems. ;D Locust bean gum is just another way of saying "carob powder." It's a legume, or rather, derived from a legume.

Frozen bananas are a good way to make substitute ice cream. You might mix in some coco shreds and other fruit to add fiber and fat, which should bring down the GI from the 50s to 30s - 40s. I don't measure it myself but if someone else wants to try and let us all know that would be nice :)
Guar gum shall give you gas. I think it is a legume. The coconut bliss brand has less than the other brands- the difference is noticeable. I've been meaning to try this at home, but I need a new ice cream maker, or some way to replace the little insert I lost when I moved. I'm figuring it should be easier than regular ice cream because the coconut milk thickens so well by itself when cold.
(coconut-based ice cream) I can't remember well enough to post a link, but I've read numerous articles/comments that all you have to do is put the container in your freezer and stir a few times during the freezing cycle. Haven't tried it myself but maybe others can comment?

It's a lot of work -- but a lot of fun, too. I've used it for regular ice cream, fruit sorbet, and coconut or nut-milk ice creams with good success. It helps to have at least two people to crank, and it takes about 35-40 minutes of cranking to get ice cream.... it's "human powered", so no need for electricity and some good exercise -- especially when that ice cream starts to get thick!
In terms of the gums, you can get the gums at the grocery store these days. Bob's Red Mill makes them. I usually choose either carageenanan (from seaweed) or guar gum (from a seed). I've also had a bit of success making "flaxseed tea" (1 tbs of flax seed in 1 cup of water, boil 5 min, steep 10 min, strain) and using the gummy flax tea as a texturizer in ice cream.
Guar gum is a legume. It's put in coconut milk to make it thick. My understanding is that most people do fine with a bit of guar gum (it doesn't bother me at all), but if it causes you digestive or other problems, don't use it.
