This isn't spam its just a link to the product I have a severe crush on as a substitute for ice cream and I want to know if I am totally kidding myself by eating this and thinking I'm still Paleo.
The gums- guar, locust bean, etc... aren't paleo and may cause gas.
There is another brand called Coconut Bliss- they use a minimal amount of guar gum and it is less disruptive.
Still, even So Delicious is great to have- it is certainly a better option than most.
You do need to read the label of every flavor, though. In some flavors wheat and/or soy show up.
Yes, it's probably going to have less of a negative effect on you if it's substituting for dairy based ice cream, but some people have sensitivities to the additives that So Delicious uses, such as carrageenan. It also has tons of sugar, more than some normal dairy brands. It's probably OK once in awhile, but it's just not very good for you. If you want some healthier treats, fruit salad or the ice cream from the Ice Dream cookbook is better (made with stevia and honey).
Edit: Ah, it's the new sugar-free version. We have discussed sugar alcohols here. Some people are sensitive, so it's wise to use with care.
Have you tried making frozen banana? Mash a banana up and leave it in your freezer for about 45 minutes. It has a lot of the same "feel" as ice cream to me, and it usually satisfies that craving. If I need something extra sweet, I'll even drizzle a bit of honey over the top.
