Here goes (this is kinda long!):
I avoid all the NADS on a daily basis, such as seed oils, excess PUFAs, sugar, gluten and all grains. I also avoid nightshades and fruit for the most part.
I eat predominantly beef, 100% grassfed only (or I won't eat it). I try and make as much bone broth as I can, and have recently started adding an extra 4-5g of gelatin to these. I try to eat liver (beef or chicken) at least 1x/wk. I eat eggs (raw and cooked, now that I've mostly healed my gut and alleviated my egg allergy/intolerance). I eat bacon occasionally if I eat breakfast, which is rare. Alot of my meat I eat raw. I eat quite a bit of sashimi, but avoid farmed fish such as salmon and tilapia. I flip my s***t for oysters and clams. I would eat oysetrs everyday if I could. I used to eat alot of sardines from the tin, but haven't been doing so recently, not sure why.
I also eat high fat and fermented raw dairy, especially grass fed heavy cream, butter, ghee and cheese (I'm Irish/Scandinavian/French so I never had a problem with it). Sometimes on a workout day I will allow myself a reward of high quality ice cream. I sually have 1 or 2 cups of black tea with heavy cream and cinnamon every day.
I really only eat spinach, kale and dark leafy greens in the vegetable category. Most others I am not really interested in. Occasionally I eat carrots or parsnips, sometimes celery root, and sweet potatoes PWO. I do eat some fermented vegetables such as lacto-fermented pickles, kimchi etc... I don't eat a whole lot of nuts, some walnuts and pecans once in awhile. I occasionally eat dulse or kelp as a salty snack. Occasionally I'll have a banana PWO. In summer I will eat blueberries and other types of dark berries.
I supplement, but have recently cut out fish oil.
I'm on an RF schedule (Regular Fasting) Leangains style, from 3pm-11pm or 4pm-12am everyday depending on my schedule, and I work out 3x a week, sometimes less, lifting heavy at max effort, with a week or two off every 6-8 weeks. Occasionally I run to and from the gym, but that's about it for cardio.
I allow myself to indulge in alcohol (I'm a bartender, gotta make sure I'm not poisoning you!), but avoid beer and wheat distilled liquors. Occasionally I'll cheat on pizza, but this is becoming a very rare occurrence, as the last time really reminded why I got into Paleo in the first place...I was sniffling and sneezing like I'd just climbed through a hay loft.
I've always been skinny, but never very muscular. I've been eating this way to maximize my results in the gym, gain lean muscle mass and lose the skinny fat, slouchy, knock-kneed me that I accepted as unavoidable for the last 30 years. I also got into this as a way to try to cure my (admittedly self-diagnosed and well-hidden) depression and manic-depressive personality disorder --- it worked. A complete disappearance of seasonal allergies was a wonderful bonus. Paleo has really served as a springboard for all manner of life-hacking. I'm in better shape, and able to gain more muscle, at 30 than I was 18!
