I cut out gluten 10 months ago and went full Paleo (well, Primal, as I do eat goat and sheep dairy on occasion) 9 months ago. I haven't knowingly touched gluten since then, though I suspect I've had the odd exposure here and there (soy sauce at sushi restaurants, that sort of thing).
Well on Sunday night I knowingly ate wheat - a fair amount (I won't go into what I had as I don't want to be 'yelled' at!!), but probably the equivalent amount to, say, 2 large slices of pizza. I knew what I was doing but it seemed worthwhile at the time. I figured I'd have some diarrhea when I got home and then move on.
Well, it's Thursday night, so 4 full days later, and my stomach is DESTROYED. I've been up in the night every night with stomach cramps, diarrhea, have been hugely bloated (feels like severe menstrual cramps but it's definitely not and I cured my cramps when I went paleo anyways), my weight is up and not coming back down as it usually does after a small (non-gluten) cheat. I couldn't even pick my daughter up from daycare today, I was keeled over in pain just before the daycare was closing and had to call my mom to get her.
I've been eating more or less normally - meat, fish, grilled veggies, coconut products and lots of them, lots of eggs, drinking lots of water, a little bit of almond milk, coconut milk.
My husband has said I need to see a doctor about this, but I suspect they'll just tell me to eat bland foods as they always used to when I called with persistent diarrhea (so then I'd eat lots of toast and the GI stuff wouldn't go away so they'd tell me to eat more toast, etc.) before I went paleo.
Can you please advise me on how to heal my stomach? Is there stuff I should be eating or avoiding while I'm feeling like this? Is there a Paleo-friendly diet for situations like this? Similar to the mainstream bland food diet that involves lots of carbs and toast? Should I stop eating altogether (I'm hungry as usual)?
Both home-made bone broth and gelatine are very healing for the bowels. You might try a GAPS style bone broth fast for a day or two, with added supplemental gelatine.
Also Melissa recommends canned pumpkin as a way of regulating the bowels, so try progressing to pumpkin bone-broth soup. Ginger would be a tasty addition and also beneficial to your digestive system.
When I gluten myself, the first thing I do is 2000mg MSM - at least once a day. (Make sure the MSM is gluten free!) It's an awesome anti-inflammatory and while it's not a cure all, it does take some of the swelling down so the intestines can calm down and start to heal. After that, I just eat paleo - lots of bone broth! - and give it some time.
You may have some form of gluten intolerance. Overall reactions vary greatly on the gluten intolerant spectrum. I'm celiac and it will take me about a week to recover from my fatigue, stomach discomfort, and joint soreness after I get slipped gluten. Broth and ginger tea (which is just sliced fresh ginger boiled in water) can help a little, but it may just take time, and crazy dietary shifts in an attempt to heal yourself are going to hinder your progress more than help it. In the meantime be very careful not to get anymore gluten in your system, no restaurants, no take-out, no processed foods.
It takes me two weeks for those symptoms to subside, plus I get really nasty rashes that take 4-6 weeks to heal. I have never heard of bone broth before and will try that if I ever get accidently poisoned again. The only recomendation I have is to drink coconut water. It helps me keep hydrated and is loaded with electrolytes.

Ginger, peppermint tea, bland food, and if you're into it, a small dose of cannabis can do wonders.
I'm celiac and deal with severe reactions from time to time. All you really need to do is grin and bear it, unfortunately.
I've been gluten free for many years. And sugar free. I eat Paleo. My father was celiac and though I didn't have his 911 reaction to gluten when I stopped eating it, my intestines were always tender and I had bloat problems. Got glutened accidentally while traveling by an olive crust atop a beautiful piece of salmon that I learned after eating it had Panko in it, then from bread crumbs adhered to cheese in a pannini I purchased at Seatac when I couldn't find my usual fallback, a hard boiled egg, at any concession in the limited time I had between planes. Finally I ate a chile relleno casserole at an election night party, the only protein available, and only later recalled from decades ago that when I made this I used a white sauce base with flour in it. I had begun after the first exposure to bloat and have hard stools, which later changed to diarrhea. By the end of the third exposure in four days I was in the severe gut pain Patricia describes and spiking a fever of 100.3. I spent three days in bed and had I not had this reaction once before and ended up in the hospital diagnosed with diverticulosis (as my father did several times before he discovered the problem was celiac disease), I'd have checked into an ER. But being quite certain the culprit was gluten, I just stopped eating, drank some water, put a hot water bottle on my belly and slept. The third day I nibbled a little roasted vegetable (turnips, carrots, yam), had some organic chicken broth, and today, day four, though my belly is still tender, it's on the mend tender and I'm ready to eat more. I suspect this won't be entirely in my rear view mirror for three or four more days. I need to make bone broth and freeze it, something I forget to do until winter inspires me to. And today I'll make a pumpkin soup with ginger: funny, pumpkin is what I give my dogs if they have digestive issues. Thanks for this wisdom and I hope Patricia's experience is way behind her now never to recur.
