Just started going paleo and am interested to see that, in some paleo circles at least, potatoes are considered a safe starch and acceptable (even necessary) for athletes. What are the thoughts on potato flour?

The only danger I see in potato starch is that it is a gateway to too many "junk foods". I use potato and tapioca starch to dredge meats for stews and "bread" fish with potato flakes. This seems to be fine. But if you're going to be replacing bread products I think this could be troublesome -- athlete or not. Probably OK on occasion, but intact potato better. |

Yes it's a safe source of carbs; necessity depends on the amount of exercise done. Doing regular intense exercise with no carbs isn't particually healthy for your adrenals. It's asking for cortosil overload. Potatoes have a great nutrient profile not sure how much (if any) is lost processing.into flour though. Personally I typically consume ~100g starch a day from potatoes (plus other tubers); but the number can vary a lot. |
