Sometimes I'll eat a food and only afterwards realize it has gluten or legumes etc. Later, as I sit on my porcelain throne, I often wonder which episode corresponds to which meal.

Is there a food or non-food that can be safely used to mark meals so that you can tell from the end-product which one you were worried about? Colorants, beads, nuts without chewing,...?

Just don't chew well, and everything will be recognizable. Sweet corn works well, if you eat that sort of thing.

Yep, that stuff goes through me unchanged. No bad symptoms--it's as if my gut flora ignore it. I don't eat it any more, though. – Nance Nov 12 2011 at 17:11
Picking this as the answer because it's the simplest. Haven't had much luck recognizing badly-chewed carrots though, and they hurt to swallow. – wmertens Nov 30 2011 at 5:18

Beets and activated charcoal will let you know what your bowel transit time is. Obviously, beets will produce a red color in your stool (don't forget you ate them, or it could be scary, and the charcoal will turn your bm black.

Also chocolate, in my case. – Nance Nov 12 2011 at 17:09

This is easy...BEETS! You'll have orange urine within a few hours, then by the next day you'll be seeing red elsewhere.

Get three or four fresh beats, roast them and enjoy.

+1 for the urine coloring. Eating 3-4 beets is a bit over the top for a marker though :-) – wmertens Nov 30 2011 at 5:20

Activated charcoal is used commonly to determine GI transit time. It is available in most drug/supplement sections.

Only the way it absorbs toxins which could help reduce the impact of gluten. Though some nutrients would be absorbed to but I doubt there was much nutrition in that gluten meal. A quick search for celiac and "activated charcoal" shows many results.
