Is it bad to melt raw milk cheese? I've seen some debate over cooking with raw milk. The heating basically acts the same as pasteurizing. I'm wondering if melting the cheese on my omelet at a low temp is destroying the benefits of have raw milk cheese.

Heating will definitely destroy a lot of the benefits of eating raw cheese. However, that doesn't mean it's "bad" for you. If you have access to grass-fed cheese, it will have already been heated. But, unless you prefer the flavor or grass-fed or can get the grass-fed more inexpensively it doesn't really make any difference since the end result will essentially be the same. |
