I've started to notice that if I eat a lot of bacon consistently (at least two or three slices a day, if not more, for days on end), I tend to get headaches, especially in the morning when I wake up. Anyone know what the problem is? I buy the expensive "uncured" bacon at Whole Foods, but it is still technically cured with a ton of salt or celery nitrates right?
I don't want to give up bacon. I love it too much.
Do you have a reaction to any other smoked meats? What about corned beef, which is cured with nitrite but not smoked? It's good to be able to establish a baseline which doesn't cause you headaches but is close to your target.
Then maybe you could try making your own bacon. "Cure" it with just sugar and salt, and smoke it with wood chips. Bacon is usually cold smoked, but if you can get some ventilation tubing you can connect two charcoal grills together with it and smoke your wood chips in one with the bacon in the other. Then enjoy; if it gives you headaches, you know it's not the nitrates.
I too get headaches from Bacon or sausage or sandwhich meat. I think it's the high salt content. The bacon is the worst. It gives me a massive headache like a visit to the ER is needed. I can't even eat a slice of bacon now. That was very disappointing to discover.
