Are they raw in the can? I do eat dairy as in heavy cream and butter so I know i can make a chowder. But do I need to clean them? take anything off ? I have only ever had smoked oysters and I didnt prepare them so I am unsure.

Not strictly Paleo options, but you can fry them up. Something crunchy helps, you can dip them in milk / egg / corn meal / panko and fry them in butter / lard / coconut oil. Jacques Pepin has a great oyster corn chowder that works great with canned oysters. I find that eating the canned ones is not quite as good as truly raw ones so I don't do it. You can make oyster shooters, fill one shot glass with an oyster and vodka, another with cocktail sauce and vodka, and shoot them one-two! |

16-32 small oysters (or scallops), or larger ones cut in half, shucked
8-16 slices of thin-cut bacon
16-32 wooden toothpicks
3-4 limes or lemons

Nothing canned is raw. The canning process is cooking/pasteurization. As for what to do with them… I personally like clams in scrambled eggs, I think oysters would probably be good too. |

The canned oysters I've had were always smoked. I've eaten them straight, but they could be tossed into a stew, or maybe some spaghetti squash & sauce? |
