Egg pancakes. 4 eggs and 2 bananas blended....I'm a very simple cook. My kids LOVE these for breakfast though. Obviously you could also bake some apples or pears or something and use those in place or in addition to the banana. |

I do a cross between an omellette and a pancake. Mash a banana, beat it together with three eggs and a dash of cinnamon. Heat a little of your favourite "grease" (butter, oil) and pour the mixture in. Fry until set. I find it easier to finish it under the griller (broiler?) rather than flipping it. Serve with a blob of almond butter, honey or double cream (depending on how paleo I'm feeling) |

You can make pumpkin pie with a meringue topping. Chocolate mousse (specifically, David Lebovitz' adaptation of Julia Child's recipe: http://www.davidlebovitz.com/2008/05/perfect-chocola/ My favorite, though, is a basic crème brûlée. |

I just made this (http://fastpaleo.com/baked-custard/) a couple days ago and it was surprisingly easy and tasty. I only made it because I had an aging less-than-whole can of coconut milk in my fridge, turned out find even light on the coconut milk. |

Chiffon cakes are mostly eggs. Google Low Carb Chiffon Cake, sub artifical sweetners with honey and flour replacement with rice flour. |

Souffles, such as chocolate or apricot souffle (I mean the hot sort with eggs, not the cold bavarois-type of thing). Sweet souffle omelets, which are beaten egg yolks with the whites whipped until stiff and folded in. Fry in butter, then fill them with apples fried in butter or a little jam (and why not chocolate? Although I haven't tried it) and fold them over. |
