These might be all I know, have fun!

  • Zabaione aka sabayon, zabajone, zabaglione
  • Puddings. I use a beaten egg to thicken pudding, just keep an eye on the mixture whisking the whole time so the egg doesn't scramble. Can you eat rice? Ginger pumpkin rice pudding is really good.
  • You can fold egg whites into pretty much anything to make a really light textured dessert. Tapioca pudding, you can make with coconut milk!, eggs whites folded into a batch of tapioca pudding at the end makes the mixture really dreamy and light. A little fresh fruit for people to spoon over the top and it would be quite nice. If it's for Thanksgiving you could do a little cranberry compote or relish to top it off.
  • Panda Cotta errm I mean Panna Cotta. Some recipes use egg whites. Some use whole eggs. Some just with gelatin.
  • Creme caramel
  • Creme brulee
  • Mousse

The thansgiving custard is just the thing for Thanksgiving... – Eric Nov 20 2011 at 18:47
I'm eating some of that pumpkin custard right now. Instead of 1/2 cup of sugar, I used 1/4 cup honey and 1/4 cup maple syrup. And I left out the vanilla because I just forgot. But it turned out absolutely fantastic. Yum!! – maurile Nov 20 2011 at 20:42

Egg pancakes.

4 eggs and 2 bananas blended....I'm a very simple cook. My kids LOVE these for breakfast though. Obviously you could also bake some apples or pears or something and use those in place or in addition to the banana.

One of these days I'm going to try this flourless chocolate cake without the sugar and with some added cinnamon.

I do a cross between an omellette and a pancake. Mash a banana, beat it together with three eggs and a dash of cinnamon. Heat a little of your favourite "grease" (butter, oil) and pour the mixture in. Fry until set. I find it easier to finish it under the griller (broiler?) rather than flipping it. Serve with a blob of almond butter, honey or double cream (depending on how paleo I'm feeling)

I just read JayJay's recipe. So, pretty much that. – Rhi Nov 20 2011 at 9:11
Awesome one Rhi !!! – Eric Nov 20 2011 at 11:10
Sounds great! I love banana omelettes, so this has a similar flavor profile. Note to self: buy bananas. – AdrianaG Nov 20 2011 at 15:41

We used to have "sidik" for Easter, and remember it having much less sweetness than this recipe, and with a hint of added vanilla. Here's a recipe: http://allrecipes.com/recipe/sirecz-easter-cheese/

Woah and yum. This with some booze soaked dried fruit and nuts would be awesome for after a dinner. – jesuisjuba - paleorepublic.com Nov 20 2011 at 17:55

jesu, you're on the right track. I think it was served with a prune or apricot paste, usually leftover kolache filling. – The Loon Nov 20 2011 at 18:15

You can make pumpkin pie with a meringue topping.

Chocolate mousse (specifically, David Lebovitz' adaptation of Julia Child's recipe: http://www.davidlebovitz.com/2008/05/perfect-chocola/

My favorite, though, is a basic crème brûlée.

I just made this (http://fastpaleo.com/baked-custard/) a couple days ago and it was surprisingly easy and tasty. I only made it because I had an aging less-than-whole can of coconut milk in my fridge, turned out find even light on the coconut milk.

Chiffon cakes are mostly eggs. Google Low Carb Chiffon Cake, sub artifical sweetners with honey and flour replacement with rice flour.

Souffles, such as chocolate or apricot souffle (I mean the hot sort with eggs, not the cold bavarois-type of thing). Sweet souffle omelets, which are beaten egg yolks with the whites whipped until stiff and folded in. Fry in butter, then fill them with apples fried in butter or a little jam (and why not chocolate? Although I haven't tried it) and fold them over.
