I am wondering whether to leave out the wheat flour in my recipe and up the ground almonds, and substitute xylitol for the sugar (Shouldn't need much if I use dried fruit). Has anyone tried this or does anyone have a recipe for Christmas pudding?

I've got one resting on my worktop! Will be testing it next weekend before making the real one. Like Panteleimon, I didn't add any extra sugar, but I did get a bit experimental and put in some dessicated coconut instead of the breadcrumbs in the original recipe. I think it was a Delia Smith recipe from the BBC website. I was surprised to find that both the suet and candied peel that would usually go in both contain pesky wheat. Grr.

I made a great christmas pudding last year - no flour of any kind, just dried fruit, nuts and spices, a little molasses, and then cooked and mashed squash to provide the 'bulk' base to the pudding that holds it all together. Think I put in an egg as well to firm it up, but I would guess that unless the mixture seems very wet it might be ok without. It actually turned out a lot better than I expected, and the whole family ate it without guessing it was gluten free.

I have made Christmas pudding with just ground almonds (no flour) but don't have the recipe to hand, unfortunately. It was delicious and nobody realised it wasn't a conventional pudding. With plenty of dried fruit I didn't need any added sugar, as the almonds are naturally sweet and if you steam the pudding well, the sugar leaks out of the fruit and sweetens the whole pudding.

I thought the recipe might be in my ancient Mrs Beeton's but sadly, not. Perhaps I just improvised and never wrote it down. I remember I also made fruit cake with all ground almonds instead of flour - it was delicious but a bit crumbly and a tiny bit dry. I reckon the substitution works better with Christmas pudding as the steaming keeps it moist. – panteleimon Nov 22 2011 at 18:37

it's once a year, it's a sure fire 20 for me - in the 80/20 rule, or actually a 10, I'm more of a a 90/10 guy. I will be having a piece of traditional christmas pudding, not too much mind you. Some things just aren't worth my valuable time and effort.

touche. fair enough, but Christmas pudding is traditionally a store bought item (at least from my experience). I know many who make their own Christmas fruit cake but pudding no. – FuelRestMotion Dec 5 2011 at 11:12
