Does anyone know of any information regarding the health benefits, or lack thereof, of yellow mustard and/or the various other kinds of mustard?

The yellow color comes from the spice turmeric, which contains the curcumin molecule, which is anti-inflammatory and anti-cancer. Turmeric is related to ginger.
The curcumin isn't readily absorbed, but absorption is said to be greatly increased if taken along with piperine, which is in black pepper.
But I'd guess that having some yellow mustard wouldn't provide a whole lot of curcumin anyway. Still, it can't hurt and spices are all generally good, IMO.
The rule for condiments seems to be that anything goes as long as you don't overdo it.
I doubt that grok got hit up for Grey Poupon, but might have gathered some mustard seed.
You can get the seed bulk, or you can find french mustard which is mostly just seed.
IMHO, mustard is an excellent condiment for red meat.

I buy / use Colman's mustard powder which is just pure mustard powder - no turmeric, salt or anything. It os bright daffodil yellow. I mix it with water. or Scotch, or white wine - whatever, to match the flavour of the food I'm eating it with. I love it!
