Does anyone know of any information regarding the health benefits, or lack thereof, of yellow mustard and/or the various other kinds of mustard?

Any information is welcome. Thanks!

I must apologize. I was assuming the mustard was of a higher quality and standard. (No sugar or iffy ingredients.) (An organic brand.) – TheSethAffect Aug 1 2010 at 2:10

The yellow color comes from the spice turmeric, which contains the curcumin molecule, which is anti-inflammatory and anti-cancer. Turmeric is related to ginger.

The curcumin isn't readily absorbed, but absorption is said to be greatly increased if taken along with piperine, which is in black pepper.

But I'd guess that having some yellow mustard wouldn't provide a whole lot of curcumin anyway. Still, it can't hurt and spices are all generally good, IMO.

I've read at a couple places that high amounts of curcumin is anti-androgenic. I think I once read an animal study supporting this fact but one can never be too sure about these things. Coming from an Indian background (AND loving mustard) I used to eat boatloads of the stuff. I dialed it back and I've seen improvements in how I feel (of course there are many covarried variables which I've changed and I most likely suffer from confirmation bias of thinking my diet is better for me now that it used to be) – Krish Aug 1 2010 at 9:08
I use Colemans Mustard Powder and the ingredients list is simple - Mustard Flour. The yellow colour is from the mustard. – andrew Sep 13 2011 at 6:49

The rule for condiments seems to be that anything goes as long as you don't overdo it.

I doubt that grok got hit up for Grey Poupon, but might have gathered some mustard seed.

You can get the seed bulk, or you can find french mustard which is mostly just seed.

IMHO, mustard is an excellent condiment for red meat.

Watch the contents...some have sugar and other not so great ingredients. You can always make your own!!!

Coincidentally, I was looking for some mustard for a burger yesterday and this is what I found it my fridge: Safeway Brand Traditional Yellow Mustard: Vinegar, Water, Mustard Seed, Salt, Turmeric, Paprika. I buy / use Colman's mustard powder which is just pure mustard powder - no turmeric, salt or anything. It os bright daffodil yellow. I mix it with water. or Scotch, or white wine - whatever, to match the flavour of the food I'm eating it with. I love it!

the mustard i get is just water and mustard seed. no nutrition or anything, so, assuming that there are no unmentioned ingredients, then it should be okay to eat.
