If you could only choose one meat (i'm just going to assume grassfed as a blanket requirement) what would you choose? I would have to choose bison with its complete nutrient profile, low but healthy fats and superb taste.

I'd choose LAMB. I LOVE Lamb's liver (and other organs.) Other reasons: They can be ranged in more environments than cattle. Baby lambs are super cute to watch until they are old enough to eat. Lamb provides wool & milk, too! |

I think I'd be happy enough living off of any one ungulate, but factoring in ease of acquisition, I'd say beef. |

If we're talking overall preference without necessarily emphasizing health, I've gotta go with chicken (blasphemy!). It's enough of an empty slate that I can season it in any way I choose to bring out a desired flavor profile. |
