I use coconut oil daily and was wondering if it can impact post-prandial blood sugar readings either positively or negatively? I ask because my understanding is that it is available for energy quicker and is processed by the body differently than other fats. So I was wondering if anyone noticed higher or lower post-prandials -- or no difference at all -- when using coconut oil in a meal versus olive oil or butter.

I've also read coconut oil can lower blood sugar, that's why its recommended for diabetics, read here about coconut oil and diabetes. I don't know hot exactly it can lower blood sugar, and I suppose there is no scientific evidence to confirm that coconut oil really helps.
