What is the glycemic index of the following root vegetables and are they Paleo?
Celery root Carrots Parsnips Sweet Potato Yams (real Yams) Batata Name Yucca Beets Daikon Malanga

Many of them on your list are in the Sydney University GI index data base, if they aren't there they probably haven't been tested by a reputably lab. http://www.glycemicindex.com/
The entries for cooked carrots are 33 (boiled) 49 (diced boiled) and 60 when boiled and pounded to a paste. For raw carrots the GIs were 35 diced and 39 when ground to a paste. There is though the anomolous entry ( repeated on many lists) -carrots at 92. Jennie Brand Miller explains this in her book, apparently this was one of the earliest tests (1981) before they established the methodology. I'm surprised it's still in the data base, it does cause confusion.
Pesonally I find the GI very useful but I'm a T1 diabetic and inject insulin.
every natural food is paleo, even grains...... Are they nutritious and relatively benign?? Yes and that's all that matters.
FYI GI is very flawed. I personally want my food to digest as fast as possible.
