It think it says on the jar that I can safely consume 1-4 tablespoons in a day.

Can I consume more if wanted?

Would there be any side effects of consuming too much?

I believe 3 Tbsp is considered a therapeutic dose. I'm sure you can ingest more if you want too but, as the others have said, ramp up slowly or you're asking for big trouble. – Shari Bambino Dec 17 2011 at 22:57

If you use it with other foods, e.g. to fry eggs, I don't think you have anything to worry about.

I will never understand people here who take it alone by the spoonful.

Keep in mind that 4 Tbsp is something like 500kcal, and I personally don't like the idea of using that significant of a chunk of my daily allowance on such a single, fairly nutritionally narrow food. (Unless it's ultra delicious).

Well, it's good to start with a small amount and work your way up...coconut oil has strong antibacterial/antifungul properties, and will cause uncomfortable die off reactions if too much is taken too soon. Sally Fallon and Mary Enig recommend taking one to two tablespoons of coconut oil prior to each meal in their book Eat Fat Lose Fat.

As much as you want, until you can't digest it anymore. You'll know when you have to run to the bathroom with diarrhea. If you're just starting out, start small, half a tablespoon and work your way up.
