Well, yesterday my friend came over and offered me a scone, she is the type to get VERY offended if I reject this type of thing, so I said i'll have a bit, but it was so damn good I had the whole thing!

About 3-4 hours later near when I sleep, I started to shake a bit and feel my energy absolutely plummet, I start to feel uncomfortably fatigued especially in the hands and feet ( joints?) and I couldn't think straight. Then as I lay in my bed my body " calmed down" after I stayed still for about 10 minutes.

I don't have any problems with gluten, but one of the main reasons for going paleo ( Ive been paleo for perhaps 3-4 months now) is because my energy levels were really weird back on a S.A.D diet.

I had the same reaction after eating some white flour that was inadvertently put into the gravy at Thanksgiving. I think it is some type of low blood sugar reaction. – Annie Dec 30 2011 at 14:57

I would be offended if I had a friend that got offended that I turned down eating something they offered me. If you know I don't eat crap don't offer me crap. On the other hand it does sound like you had a sugar crash. – Jonesey Dec 30 2011 at 20:02

Sounds like low blood-glucose. You're probably low-ish carb paleo most of the time and eating a starch bomb like that caused you to over-produce insulin taking your blood sugar too low.

is this the first gluten you have had in the past 3 months? I hear of alot of people becoming allergic per se after not eating it for some time. Not that you are medically allergic, just that now your body recognizances it as a foreign and bad substance.

If i eat gluten now, I feel terrible - headaches, upset stomach ect.

Yes, people with these kind of reactions need to get a biopsy for celiac. Undiagnosed celiac can cause all kinds of health problems as you age, even cancer. – Bread-Eating Beelzebub Dec 30 2011 at 16:54

but you don't need to pay for a biopsy to find out there is a problem. Just quit eating wheat and it is much cheaper. – The Loon Dec 30 2011 at 17:31

A formal diagnosis can make it easier to get special follow up care (cancer or osteoporosis screenings, vitamin mineral deficiency screenings - B-12, D and iron are often low) or prenatal care or the appropriate (ie GF) meds and food if you are ever hospitalized. Celiac is mostly about the diet, sure, but the diagnosis helps you get the support that you may need. – NoGlutenEver Dec 30 2011 at 20:26

yes it sounds like rebound hypoglycemia( low blood sugar due to the transient over production of insulin). this used to happen to me several times a day on the SAD diet.

I agree with others, sounds like a low-blood sugar thing. If you're gonna 'cheat' in future, you can follow it, or rather combine it, with some protein and that will help mitigate the response. I was surprised when my dad told me that part of his education in diabetic eating was to up the fiber and protein. Your guts might get upset, but added protein should help prevent the shaky feelings.
