Are they healthy?
Are organic bananas better than non-organic? Especially if the peel is edible?
Do the peels have lots of pesticides on them?
What else could I use the peels for, if not eaten?
Yes they are edible, and yes they are healthy. I would opt for organic if you want to eat them to avoid the pesticides.
If you don't want to eat them you can compost them.
Never ever ever eat non-organic banana peel! The pesticide used on bananas is incredibly intense and causes prostate cancer.
Some argue that even the banana itself sometimes still contains some of the pesticide. Go organic.
I remember the someone asking Robb Wolf this question in a pod cast a while back, if memory serves (and I believe it does) is the solution was that they have toxic levels of something in them... but I wish I could be more exact.
