I have some yams chopped and soaked over night in water, ready to make yam fries. I typically season with a little olive oil, salt and pepper. I'm curious if anyone has tried an other seasonings on their fries that have come off as sensational? I saw a asian coooking show yesterday recommend roasted cumin and chinese peppercorns. Sounded good but I don't have fresh cumin or chinese peppercorns. Ground Cumin and garlic salt maybe?

I use Rinaldo's Organic Garlic Gold Oil, Kosher salt, black pepper, and smoked paprika but I don't wash/soak them before. Then put 'em on a baking sheet in a single layer at 425 for at least 30 minutes (more if I want it crispier), turning them over once. – April S. Jan 2 2012 at 4:12

I actually just love the potatoes plain with large flaky sea salt. Sometimes maybe a little lemon or orange zest over the top. And always duck fat or maybe just a teeny bit of coconut oil on the pan so they don't stick.

Here are a few other seasonings I like:

  • rosemary, sea salt, pepper
  • garlic, onion, black pepper
  • curry
  • cinnamon, nutmeg, clove, fennel, hot chili flake
  • cumin, garlic, cinnamon, chile powder

If you're frying them raw I'd recommend slicing them thin. Cubed or wedges I'd preboil them to reduce the frying time. Raw is OK for deep fat, but it's hard to get a short cook time in a pan without smoking the oil. – thhq Jan 2 2012 at 12:52

If you're going stove top in a pan then I like to steam until they're about 1/2 cooked so they'll finish in the fat. If I'm doing batons I like to keep them flat with the steam method so less chance of bouncing around and breaking up or something. Rinse to make sure the starch is off. Definitely you could parboil just make sure the actual boil is super calm :) – jesuisjuba - paleorepublic.com Jan 2 2012 at 15:49

I've made fries only a few times but a lot of the flavor depends on the fat used. So far, I've tried coconut oil, goose fat and bacon fat. I'd say the goose fat was best with bacon a close second. Bacon had the advantage of crumbled bacon bits on the fries.

Anyhow, when I drained my fries I sprinkled them with turmeric and salt and I thought that was good. I'd make them more often but I'm in weight loss mode.

Paprika, garlic salt, black pepper, and salt, with maybe a little coriander and cumin thrown in. A friend does them with orange zest and ginger somehow....yum!

I season them after cooking. I like thick pepper sauces such as cholula because they stick to the fries better than vinegar or Tabasco.
