I have some yams chopped and soaked over night in water, ready to make yam fries. I typically season with a little olive oil, salt and pepper. I'm curious if anyone has tried an other seasonings on their fries that have come off as sensational? I saw a asian coooking show yesterday recommend roasted cumin and chinese peppercorns. Sounded good but I don't have fresh cumin or chinese peppercorns. Ground Cumin and garlic salt maybe?

I actually just love the potatoes plain with large flaky sea salt. Sometimes maybe a little lemon or orange zest over the top. And always duck fat or maybe just a teeny bit of coconut oil on the pan so they don't stick. Here are a few other seasonings I like:

I've made fries only a few times but a lot of the flavor depends on the fat used. So far, I've tried coconut oil, goose fat and bacon fat. I'd say the goose fat was best with bacon a close second. Bacon had the advantage of crumbled bacon bits on the fries. Anyhow, when I drained my fries I sprinkled them with turmeric and salt and I thought that was good. I'd make them more often but I'm in weight loss mode. |

Paprika, garlic salt, black pepper, and salt, with maybe a little coriander and cumin thrown in. A friend does them with orange zest and ginger somehow....yum! |
