I'm having such a hard time finding nitrate/-ite free foods. Okay, so really it's bacon (as I don't consume much of anything else w/nitrates/ites - that I'm aware of).
BUT... I live in the midwest, US, not near any of the cooler groceries (ie, Whole Foods, et al) & am struggling to find these.
So, I was wondering what brands of N-free meats do you consume?
Is this really a big issue (I don't consume a lotta Vit C - should I?)?
I would not worry too much about nitrates in bacon. You will find more nitrates in vegetables. I would worry more about the quality of the bacon as most stuff from the grocery store are from non-ecologically raised pork. I buy my bacon from 100% naturally raised pigs and it still contains nitrates because that's part of the process. But its all local and tastes so much better than the store bought stuff.
