I'm taking 150 eighth graders on the road for a week in March. Obviously, the places that we will be eating will not be Paleo friendly. They range from fast food to seafood places once we hit the Outer Banks to pizza in the hotel to Golden Corral. I'm not sure if I can order off the menu at the seafood places or if we have a set menu, but I should be able to order broiled flounder at least. Golden Corral should be a buffet, so I can pick and choose from among their (definitely not local grass-fed) options. Breakfasts will be hotel breakfast, with all of the mystery and probable waffles that such things usually entail. All of our food is provided by the tour company en route.
About me: I have Rheumatoid Arthritis and if I eat wheat it activates. For the most part, I am pain free but two days after wheat I have a lot of pain and swelling in my hands and feet. I eat dairy once every couple of days in whole fat forms.
The question: What can I take with me to make sure I don't chew my own arm off? I can make beef jerky, obviously, but I'm worried I'll eat it all on the first day. I've never made pemmican before, but I can give that a shot. A jar of coconut oil? We'll be staying in a hotel each night, so I could conceivably take a small cooler and refresh the ice daily. I don't think I'll be able to convince the bus driver to give me 20 minutes in a grocery store once we're on the road.
Any other ideas?
